Raw Vegan Singapore Noodles

Noodles

2 Spiralized zucchini

 

Sauce

 

1 tablespoon grated ginger

Juice of 1 lemon

1/4 cup coconut cream

1 teaspoons raw tahini

1 teaspoon tamari

1/2 teaspoon maple syrup

1/4 teaspoon sesame oil

1 teaspoon turmeric

 

Pinch chili flakes

1 cup Water

 

1/2 tablespoon psyllium husk

 

Vegetables:

1/2 green bell pepper

1/4 cup spring onions

handful walnuts

handful cashews

 

1. Spiralize zucchini using the spiralizer julienne blade or julienne peeler.

2. In a food processor or high speed blender, blend all Sauce ingredients, except psyllium husk. Mix with psyllium husk.

3. Chop green pepper and onions and add walnuts and cashews (you can add your favourite Asian vegetables too).

4.Mix and serve.
