4 unpeeled spiralized zucchini
Curry Powder
1½ teaspoons turmeric powder
1 teaspoon garam masala
1 teaspoon asafoetida powder (optional)
1 teaspoon ground mustard
½ teaspoon coriander powder
½ teaspoon cumin powder
½ teaspoon ginger powder
¼ teaspoon nutmeg powder
¼ teaspoon paprika powder
¼ teaspoon cinnamon powder
Curry
Curry Powder from above
2 peeled zucchini
1 tomato
1 yellow bell pepper
Juice of 2 lemons
2 teaspoons maple syrup
2 teaspoons coconut aminos
2 teaspoons olive oil
pinch salt
pinch chilli powder (optional)
Garnish
chopped mint leaves
1. Mix Curry Powder ingredients.
2. In a food processor or high speed blender, mix the Curry Powder with the rest of the ingredients.
3. Pour over spiralized zucchini, and serve with chopped mint leaves.
