Raw Vegan Pumpkin Soup

Soup
2 cups chopped pumpkin
1 cup water
the juice of 2 lemons
1 tablespoon oregano
1 teaspoon basil
1 teaspoon rosemary
1/2 teaspoon nutmeg powder
1/2 teaspoon cinnamon powder
 
1 tablespoon olive oil
pinch salt
1/2 cup chopped parsley
 
 
Garnish
white onion
pumpkin seeds

1. In a food processor or high speed blender, blend until smooth pumpkin, water, lemon juice and spices.
2. Add chopped parsley, olive oil and salt.
3. Carefully warm up to 42 degrees Celsius (108 degrees Fahrenheit).
4. Garnish with white onion and pumpkin seeds.
