Raw Vegan Stuffed Peppers

Makes 6
 
Peppers
3 red bell peppers sliced in half
 
Filling
2 peeled zucchini
1/2 cup chopped dill
1/2 cup chopped parsley
Juice of 2 lemons
2 tablespoons olive oil
1/2 teaspoon sesame oil
1 tablespoon turmeric
1 teaspoon coriander
1 teaspoon paprika
sprinkle chilli flakes

 

 

1. In a food processor blend zucchini to rice consistency.

 

2. Add all other Filling ingredients and mix.

 

3. Cut the peppers into 2 halves and stuff with Filling ingredients.

 

4. Dehydrate stuffed peppers, at 42 degrees Celsius (108 degrees Fahrenheit) for 3-4 hours, until mostly dry.
