RAW VEGAN CREAMY MUSHROOM SPAGHETTI

Preparation: 30 minutes Serves 2

INGREDIENTS:

NOODLES

2 cucumbers

SAUCE

liquid from the spiralized cucumbers
1⁄2 cup pine nuts
the juice of 1 lemon
2 tablespoons extra-virgin olive oil
1 teaspoon nama shoyu or tamari
pinch garlic powder
pinch salt
pinch paprika
1⁄8 cup water

VEGETABLES
2 cups baby button (or other small) mushrooms
handful fresh coriander leaves

INSTRUCTIONS:
NOODLES
Using a spiralizer julienne blade or a julienne peeler, spiralize the cucumber into noodles.

SAUCE
Drain the liquids from the spiralized cucumbers into a food processor or high-speed blender and blend with the rest of the ingredients until smooth.

VEGETABLES
Chop and mix with Noodles and Sauce.
