Raw Vegan Cashew Mozzarella

Makes 2 plates

INGREDIENTS:
1 cup cashews
2 tablespoons pine nuts
the juice of 1 lemon
1 tablespoon extra-virgin olive oil
1 teaspoon apple cider vinegar pinch salt
1⁄4 cup water
2 tablespoons ground psyllium husk

INSTRUCTIONS:
In a food processor or high-speed blender, blend all ingredients, except for the psyllium husk, until smooth. Mix with psyllium husk and let stand in the fridge for 15 minutes to set.

Serve with your favorite vegetables for dips
