Raw Vegan Latkes “Potato”-Pancakes

Makes 8-10

INGREDIENTS

1 zucchini

1/4 onion

1 tablespoon olive oil

1 tablespoons rapeseed oil 

1 teaspoon rosemary

Pinch: garlic, salt, pepper, paprika

1/4 cup pine nuts

1/8 cup water to blend

1/8 tsp onion powder

1 tablespoon Flax ground

INSTRUCTIONS

  1. Grate zucchini and onion.
  2. In a food processor or high speed blender, mix the rest of the ingredients, except for Flax seeds.
  3. Mill flax seeds into powder and mix everything together
  4. Make into paddies.
  5. Dehydrate 8-10 hours, or until dry.

Dressing:
