Raw Vegan Ketchup

Ketchup

1 cup tomatoes

1/2 teaspoon apple cider vinegar

1/4 teaspoon onion salt

Pinch garlic 

1/4 teaspoon salt

1/2 teaspoon maple syrup

1 teaspoon coconut aminos 

2 cm celery 

1/4 cup water (or more if needed)

 

Zucchini Fresh Fries

2 zucchini

2 tablespoons olive oil

1 teaspoon apple cider vinegar

1/2 teaspoon ginger powder

2 teaspoons turmeric

2 teaspoon salt

1 teaspoon black pepper

pinch paprika

  1. In a food processor or high speed blender blend until smooth Ketchup ingredients except for water.
  2. Dehydrate at 42 degrees C (108 F) for 4-5 hours, to break the tomato taste. After dehydration, mix with water in a food processor or high speed blender.
  3. Chop zucchini to create chips and mix with the other Fresh Fries ingredients.
  4. Dehydrate chips for approximately 5 hours until soft. (They are not crunchy, because they are fresh fries…)
