Raw Vegan Blueberry Cupcakes

Makes 10

Batter
2 cups dates, soaked for 1 hour
2 bananas
1 teaspoon vanilla extract

Fruit
1 cup blueberries

Icing
1 cup dates, soaked for 1 hour
meat of 1 Thai coconut
1 teaspoon alcohol-free vanilla extract

 

Topping

1/2 cup blueberries


1. In a food processor or high speed blender, blend till smooth all Batter ingredients. Add the blueberries and mix.

 

2. Pour into paper cases and dehydrate at at 42 degrees Celsius (108 degrees Fahrenheit) for 6-7 hours until top and sides are firm.

 

3. In a food processor or high speed blender, blend till smooth all Icing ingredients, and spread icing over the cupcakes, decorating with blueberries.
