Raw Vegan French Crepe (Crêpe Suzette)

Makes 1 Crepe

 

Crepe

3 bananas
1 teaspoon cinnamon
1 teaspoon vanilla

 
Chocolate Filling
1-2 teaspoons raw cacao powder
1-2 tablespoons maple syrup

Fruit
banana
strawberry

  1. In a food processor or high speed blender, blend all Crepe ingredients until smooth.
  2. Dehydrate on a teflex sheet at 42 degrees Celsius (108 degrees Fahrenheit) until dry enough to flip to a mesh or stainless steel sheet and then dehydrate until dry, (approximately 4 hours), then fold in half and keep dehydrating until mostly dry (about one more hour).
  3. Fold to half and fill with chocolate filling, then fold again to a quarter or even smaller, if you like.
  4. Decorate with fruit.
