Raw Vegan Spaghetti Mini Pizza

Makes 6-8

 

Pizza Base

1 1/2 cups sun-dried tomatoes

1 small carrot

1 cup Thai coconut meat

1/2 cup water

1 tablespoon olive oil

1 teaspoon coriander

1 teaspoon oregano

1/2 teaspoon nutmeg

1/2 teaspoon paprika

1/2 teaspoon rosemary

2 peeled and spiralized zucchini

handful (1/2 cup) fresh basil leaves

 

Toppings

dehydrated tomatoes and peppers

fresh basil

  1. In a food processor or high speed blender, blend till smooth sun-dried tomatoes, carrot, Thai coconut meat, water,  olive oil, coriander, oregano, nutmeg, paprika and rosemary.
  2. Mix well with spiralized zucchini and basil.
  3. Dehydrate at 42 degrees Celsius (108 degrees Fahrenheit), 7-8 hours or until dry. At the same time you can also dehydrate tomatoes and pepper.
  4. Top with dried tomatoes and pepper and fresh basil.
