Raw Vegan Falafel

Makes 12

INGREDIENTS:

CHIA SEED BASE

1⁄2 cup chia seeds

1⁄2 cup water

WALNUT AND TAHINI BLEND

1⁄2 cup walnuts

1⁄2 cup raw tahini

VEGETABLES

1⁄2 carrot
1⁄4 cup coriander leaves
1⁄2 white onion
1 tablespoon extra-virgin olive oil

2 tablespoons cumin
1 tablespoon coriander powder

pinch salt and pepper
pinch garlic powder

INSTRUCTIONS:
CHIA SEED BASE
Mix chia seeds with water and set aside for about 15 minutes to allow the water to absorb, stirring a few times during the wait.

WALNUT AND TAHINI BLEND
In a mill or high-speed blender, mill walnuts to a powder. Blend with tahini.

VEGETABLES
Mince or grate the carrot, and chop coriander and onion. Mix with the rest of the ingredients and with the Walnut and Tahini Blend. Mix well with the Chia Seed Base and form into balls.
