Makes 12–15
INGREDIENTS:
WRAPS
1 large cucumber
FILLING
½ cup dill
2 tablespoons chives
½ carrot
½ cup cashews
the juice of 2 lemons
2 tablespoons raw tahini
1 tablespoon ground psyllium husk
pinch salt
¼ cup water
INSTRUCTIONS:
WRAPS
Using a mandolin, cut cucumber into thin strips.
FILLING
Chop dill, chives, and carrot. In a food processor or high-speed blender, blend the rest of the ingredients until smooth. Mix with dill, chives and carrot.
Place Filling on wraps and roll.
