Raw Vegan Creamy Mushroom Fettuccine

Serves Two

Spaghetti
4 peeled spiralized zucchini

Sauce
Meat of 2 Thai coconuts
Juice of 4 lemons
2 Tablespoons olive oil
1 teaspoon nutmeg powder
1 teaspoon paprika
pinch salt

Vegetables
Mushrooms
Avocado
Sun-dried tomatoes

1. In a food processor or high speed blender blend all Sauce ingredients until creamy.

 

2. Mix with Spaghetti and vegetables.
