This recipe is inspired by a cracker I used to buy, but they stopped making it (boo!) it was called Rawlicious.
Makes 24 crackers
Vegetables
½ cup sun-dried tomatoes
¼ cup minced carrot
1 teaspoon oregano
1 teaspoon ground coriander
Pinch garlic
½ cup water
Nut base
1 cup Brazil nuts
½ cup sunflower seeds
½ cup cashews
Instructions
Vegetables
Marinade sun-dried tomatoes for 1 hour to soften.
Mince the carrot. In a food processor or high speed blender, blend tomatoes with carrot.
Add oregano, coriander garlic and water, and blend.
Nut Base
In a high-speed blender or mill, process the nut base into a powder.
Mix with the vegetables to a stiff batter.
Spread on teflex dehydrator sheets and form crackers.
Dehydrate for 1-2 hours at 40 degrees celsius (108 degrees Fahrenheit)
Move to a mesh or stainless steel tray and continue to dehydrate for 3-4 hours more, until crackers are firm.
