Raw Vegan Zucchini Crust Pizza

Makes 1 Pizza
 
Crust:
2 zucchini
2 Thai coconuts
2 tablespoons olive oil
1 tablespoon oregano
1 tablespoon pine nuts ground with 1 teaspoon water (or as much as it takes to cream the pine nuts)
1/2 teaspoon apple cider vinegar

Topping:
1 tomato
1 mushroom
1/2 red bell pepper
1/4 onion

1 teaspoon oregano
1 teaspoon rosemary
1/2 teaspoon nutmeg
1/4 teaspoon paprika
pinch coriander ground
pinch garlic

1. In a food processor or high speed blender, blend till smooth all Crust ingredients.
 
2. Dehydrate at 42 degrees Celsius (108 degrees Fahrenheit), 10-12 hours or until almost dry.
 
3. At the same time: Cut dehydrate the tomato, mushroom, bell pepper and onion separately for 2-3 hours.
 
4. Add the spices and vegetables to the crust and dehydrate the 1/2-1 hour together.
