My Toddler’s Cheddar “Cheese” recipe

Ingredients:

1/4 cup pine nuts

1 tablespoon ground almonds

A few cashew nuts

3 teaspoons olive oil

2 teaspoons apple cider vinegar

Salt to taste (needs to be salty)

1/8 cup water

1 tablespoons agar powder

1/2 cup of boiling water

Instructions:

1. In a food processor, high speed blender or mill, blend dry ingredients, followed by oil and vinegar, then adding the 1/8 cup water

2. In a small pot, boil water, and add the agar powder. Lower to a simmer, and mix until smooth.

3. Cool agar mixture to 42 degrees Celsius (108 degrees Fahrenheit) and add the pine nut mixture. Let cool (you can use the fridge/freezer) and cut.

4. Dehydrate for 3-5 hours at 42 degrees Celsius (108 degrees Fahrenheit), until crispy.
