Tahini Noodles

Serves two

 

Noodles

2 Zucchini spiralized

 

Tahini

½ cup sesame seeds

juice of 2 lemons

1 ½ tablespoons olive oil

1 tablespoon maple syrup

½ teaspoon apple cider vinegar

 

Vegetables

2 celery stems

1 yellow bell pepper

1 red bell pepper

½ cup chopped chives

handful pine nuts

pinch black pepper

 

1. In a food processor or high speed blender, blend till smooth all Tahini ingredients. You may want to start with the sesame seeds and then add the rest of the ingredients.

 

2. Chop the vegetables

 

3. Pour Tahini over Vegetables and Zucchini
