INGREDIENTS:
BASE
6 red bell peppers
FILLING
2 zucchini
2 avocados
1 cup parsley
1⁄2 cup mint
1⁄2 cup sun-dried tomatoes
1⁄2 cup onion
the juice of 2 lemons
2 tablespoons extra-virgin olive oil
1 tablespoon oregano
2 teaspoons coriander powder
1⁄2–1 teaspoon paprika
INSTRUCTIONS:
BASE
Cut the peppers’ tops off, or slice peppers in half.
FILLING
Grate the zucchini into rice consistency and mash the avocados.
Chop parsley, mint, sun-dried tomatoes, and onion, and mix with the rest of the ingredients.
Fill the peppers.
