Raw Vegan Spaghetti Bolognese

Makes 2 bowls

INGREDIENTS:
NOODLES
2 zucchini


SAUCE
¼ cup basil
1 cup walnuts
½ cup pine nuts
½ cup cherry or baby plum tomatoes
½ cup sun-dried tomatoes
½ carrot
½ white onion
2 tablespoons extra-virgin olive oil
2 teaspoons oregano
½ teaspoon garlic powder
pinch black pepper

INSTRUCTIONS:

NOODLES
Using a spiralizer julienne blade or a julienne peeler, spiralize the zucchini into noodles.

SAUCE
Chop the basil and set aside. In a food processor or high-speed blender, blend the rest of the ingredients until smooth. Mix with the Noodles and basil.
