Som Tam Salad-Thai Green Papaya Salad

Preparation: 30 minutes
Serves 2
INGREDIENTS:
1 large green (unripe) papaya
½ carrot
3 cups cherry tomatoes
1 cup cabbage or lettuce
½ cup cashews
handful peanuts (pine nuts work too)
the juice of 1 lime or lemon
1 tablespoon raw tahini
1 teaspoon maple syrup
1 teaspoon nama shoyu or tamari
½ teaspoon apple cider vinegar
¼ teaspoon garlic powder
pinch chili flakes
pinch salt

INSTRUCTIONS:


Peel the papaya. Using a julienne peeler, cut papaya and carrot into long, thin slices.


Cut cherry tomatoes into halves and chop the cabbage into thin slices.


Mix with the rest of the ingredients.
