Guacamole
1 avocado
½ cup fresh coriander
the juice of 3 lemons
1 teaspoon apple cider vinegar
2 tablespoons olive oil
½ teaspoon mustard powder
¼ cup water
salt and pepper
½ tomato
Lettuce Base
2 lettuce heads
Garnish
pine nuts chili flakes
Instructions:
Guacamole
In a food processor or high-speed blender, blend all Guacamole ingredients, except the tomato, until smooth.
Chop the tomato and mix with the Guacamole.
Lettuce Base
Chop lettuce heads into large slices.
Spread Guacamole over the lettuce.
Garnish
Garnish with pine nuts and chili flakes.
