Spreadable Cashew Halloumi

Makes 2 bowls


INGREDIENTS:
½ cup cashews
¼ cup almond powder
2 tablespoons extra-virgin olive oil
¼ teaspoon asafoetida powder
a few drops nama shoyu or tamari
pinch salt
½ cup water
2 tablespoons ground psyllium husk

INSTRUCTIONS:

In a food processor or high-speed blender, blend all ingredients, except for the psyllium husk, until smooth. Then, mix well with the psyllium husk.

Serve with your favorite vegetables for dips or with raw vegan crackers. You can also use this to make a Halloumi Cracker Sandwich—see recipe in the Mediterranean Main Course section of the book.
