Raw Vegan Coconut-Creamy “Pasta”

Makes one dish

 

Pasta

2 zucchini spiralized

1 tablespoon olive oil

1 tablespoon rosemary

pinch salt

 

Sauce

1/2 cup coconut meat

juice of 1 lemon

1/2 teaspoon apple cider vinegar

1 tablespoon rosemary

1/2 teaspoon paprika

1/2 teaspoon cumin

1/2 teaspoon nutmeg

1/4 cup water

 

Garnish

1/4 cup basil sliced long

 

 

1. At least 30 minutes before serving, mix the spiralized zucchini with olive oil, rosemary and salt. Let stand to soften zucchini.

 

2. In a food processor or high speed blender, blend Sauce ingredients.

 

3. Mix with pasta and serve with basil.
