Preparation:15 minutes Makes 8
INGREDIENTS:
BOATS
2 large zucchini
FILLING
1 avocado
1⁄2 cucumber
1 red or green pepper
1 cup dill
2 tablespoons onion
the juice of 1 lemon
1 tablespoon extra-virgin olive oil
1⁄4 teaspoon paprika
pinch chili flakes
pinch salt and pepper
(OPTIONAL) GARNISH
sprinkle corn
INSTRUCTIONS:
BOATS
Slice each zucchini into four parts. Using a spoon, scrape out the middle; save this to be used in salads or other dishes of your choice.
FILLING
Mash the avocado. Slice cucumber, pepper, dill, and onion, and mix with the avocado and the rest of the ingredients.
Fill the Boats.
(OPTIONAL) GARNISH
Sprinkle corn on top of the Boats.
