Raw Vegan Cucumber Dill Soup

Soup
2 large peeled cucumbers (or 4 small cucumbers)
1 avocado
juice of 2-3 lemons
1 tablespoon olive oil
1 cup dill
1/4 cup mint
1 teaspoon rosemary
Pinch salt

Garnish
chives
red pepper flakes
cucumber slices
 

1. In a food processor or high speed blender, blend all Soup ingredients until smooth.
 
2. Using a milk thermometer, heat to 42 degrees Celsius (108 degrees Fahrenheit).
 
3. Garnish with fresh chives, red pepper flakes and cucumber slices.
