2 peeled zucchini
juice of 1 lemon
2 teaspoons fresh grated ginger
2 teaspoons cold pressed sesame oil
1 teaspoon maple syrup
1-2 teaspoons Coconut Aminos or Tamari
1 teaspoon apple cider vinegar
1 teaspoon nutmeg
1 teaspoon ginger powder
Vegetables
avocado
cucumber and dill
different colour peppers
1. Cut the zucchini into 2 cm pieces. In a food processor pulse until you reach rice consistency.

1. Cut the zucchini into 2 cm pieces. In a food processor pulse until you reach rice consistency.
2. Add the rest of the Rice ingredients.
3. Wet a 10 cm rectangle section across the nori sheet and place rice portion on it. Place vegetables and roll, closing the sheet (it’s best to wet the top 2 cm of the sheet before closing).
