Raw Vegan “Tuna” salad with Green Peppers and Avocado

Tuna Base:

1/2 cup sunflower seeds
1/4 cup pecan nuts

 

Vegetables:

1 cup coriander
1/4 cup celery
1/2 teaspoon apple cider vinegar
Juice of 1 lemon
2 Tablespoons olive oil
1 teaspoon ground coriander
Pinch salt and pepper

1 green bell pepper
1/2 white or red onion

Garnish

Avocado, carrot, and lettuce

Instructions:

1. Grind Tuan Base ingredients until very smooth

2. Add coriander, celery, apple cider vinegar, lemon juice, olive oil, ground coriander and salt and pepper, and in a food processor process roughly.

3. Chop Green pepper and onion and add. Mix everything together.

4. Serve with Avocado, carrots, and lettuce
