Raw Vegan Tahini Pad Thai

Noodles
2 Zucchini
2 carrots
1 cucumber

Tahini Sauce
1/2 cup raw sesame paste or tahini
juice of 2 lemons
1 teaspoon maple syrup or date paste
1 tablespoon coconut aminos
½ teaspoon apple cider vinegar
1 tablespoon grated ginger
Pinch black pepper
1/4 cup water
Pinch salt (optional)

Vegetables
1 red bell pepper
1/2 cup coriander
1 avocado

Garnish
sprinkle of red pepper
chopped spring onions

1. Spiralize noodles ingrediets

2. In a food processor or high speed blender, blend all sauce ingredients.

3. Chop vegetables and mix with Noodles and Sauce.
