Dough
4 bananas
1 teaspoon cinnamon
1 teaspoon vanilla extract
1 tablespoon coconut flour
a few drops almond extract
Chocolate filling
2 teaspoons raw cacao powder
1/4 to 1/3 cup water
6-7 sun-dried dates
1. In a food processor or high speed blender, blend all dough ingredients until smooth.
2. There are two ways to make Rugelach:
The Pizza method:
You make a circle out of the dough, then spread the chocolate on top, cut into “pizza” triangles and roll each triangle towards the center. This is the method used in the picture here. If you are making a circle, make sure the middle is not crowded, so it dries first.
The Sushi method:
You make a square out of the dough, then spread the chocolate on top, roll from one side to another, then cut the roll into pieces.
3. Dehydrate dough 3-5 hours or until almost dry, at 42 degrees Celsius (108 degrees Fahrenheit).
4. Mix cacao with 2 tablespoons water, until you get a dark liquid mixture. Then, in a food processor or high speed blender, blend all dates, adding the chocolate mixture and the rest of the water. You need enough water to make an easily spreadable, but stable filling, so it doesn’t spill.
5. Spread on the dough and roll in your desired way.
6. Dehydrate about 1-2 more hours, or until dry.
