Today I was reminded of how much I missed trying out new recipes and doing RawMunchies blog.
A couple of days ago I went with a friend to GrassRoots Cafe in Edinburgh, and had the raw vegan Thai Curry to celebrate the release of my new book, Vegan Beauty Makeover, which got amazing reviews this week. If I’m honest, that Thai Curry is probably the reason I persuaded my friend to go. I ate it last time and it was so good… that I had to make my own.
So, after googling different recipes, putting a list of what I thought might go together, one failed attempt, and one unbelievably delicious success (!!!) here it is:

Thai Curry
Prep time: 30 minutes
Serves: 2
Sauce
2 cups unsweetened coconut milk
1 tablespoon lime juice
zest of 1/2 orange
1 teaspoon Lemongrass
2 tablespoon fresh ginger grated
1 teaspoon maple syrup
1/2 teaspoon apple cider vinegar
1 teaspoon cumin
pinch of salt
Pinch chilli flakes(optional)
Vegetables
1/2 red pepper
2 tablespoon green onion
Handful cilantro
1/2 Carrot
1/2 cup broccoli
1/2 cup cauliflower
(Optional) zucchini peeled
1. In a food processor or high speed blender, been Sauce ingredients until smooth.
2. Chop or julienne Vegetables and mix with the sauce.
