Raw Vegan Nut-Free Cottage “Cheese” with Herbs

Cheese
meat of 1 Thai coconut
juice of 2 lemons
1/4 onion
1 tablespoon olive oil
1/2 teaspoon apple cider vinegar
1 1/2 teaspoons oregano
1/2 teaspoon nutmeg
pinch salt

Garnish
paprika
chopped dill

1. In a food processor or high speed blender, blend all Cheese ingredients until reaching Cottage Cheese consistency.
2. Serve with paprika, chopped dill, favourite vegetables and crackers.
