Raw Vegan Biryani

 

Serves 2

 

Masala Mix

1 teaspoon cardamom

1/2 teaspoon cloves

1/2 teaspoon turmeric

1/4 teaspoon cinnamon

1/4 teaspoon garlic

1/4 teaspoon ginger

pinch chilli flakes

1/2 teaspoon sesame oil

 

Dehydrated Vegetables

1/2 white onion

1 tomato

1/2 Masala Mix

 

Meat

1 cup coconut meat – chopped into 1 inch slices

1/2 teaspoon chicken masala (poultry seasoning)

1 tablespoon olive oil

1 tablespoon coconut aminos

 

Rice

1 parsnip – pulsed to rice consistency

1/2 Masala Mix

 

Fresh Vegetables

1/2 cup coriander

1/2 cup mint 

Juice of 1 lemon

1/2 teaspoon sesame oil

1/2 teaspoon coconut flour

1/4 cup water

  1. Mix Masala Mix ingredients
  2. Chop white onion and tomato and mix with half the Masala Mix. Dehydrate at 42 degrees Celsius (108 degrees Fahrenheit) 3-4 hours.
  3. Mix the Meat ingredients and marinade for 2-3 hours.
  4. In a food processor or blender, pulse parsnip to rice consistency. Mix with the other half of the Masala Mix.
  5. Chop the coriander and mint and add with the rest of the Fresh Vegetables to the rice.
  6. Add the Dehydrated Vegetables and the Meat
