Ginger Leather Fruit Sushi

Makes 2 rolls

 

Sheet
1 banana
1/2 teaspoon freshly minced ginger
1/4 cup raisins or soaked dates


Fruit
1 peeled apple
1 cup strawberries sliced long

Serve
Maple syrup

1. In a food processor or high speed blender, blend all sheet ingredients until smooth.
2. Spread on a teflex sheet and dehydrate 10 hours or over-night at 42 degrees Celsius (108 degrees Fahrenheit).
3. In a food processor or high speed blender, pulse apple until reaching rice consistency.
4. Spread on the leather and place strawberry slices above. Roll and cut to sushi bits.
5. Serve with maple syrup.
